Thai Curry Chicken

The Perfect Weeknight Meal

Are you looking for a way to spice up your pallet? Try my Thai Curry chicken, which is a nutritious and balanced way to get some flavor into an easy weekday dinner. The ginger and curry seasoning add spice, while the onions and garlic add a tang, and the olive oil and tomatoes soften the flavor. This is an easy weekday dinner that only takes a half hour to cook.

Thai Curry Paste, Herbs de Provence, Sesame Seeds, and Ginger

Ingredients:

  • 1-2 lbs of chicken thighs (feeds 3-5 people)
  • 2 tablespoons of curry paste
  • 1 teaspoon of ginger
  • 1 onion
  • 3 gloves of garlic, minced
  • 1 can of diced tomatoes
  • 3 tablespoons of olive oil
  • Sesame Seed and herbs for garnish

Instructions:

  • Coat a pan in olive oil, put on medium heat
  • Place chicken in pan
  • Dice onions and mince garlic
  • When pan is heated, place onions and minced garlic into pan with chicken.
  • In a bowl, mix tomatoes, curry paste, and ginger.
  • When chicken is browned on both sides, pour in mixture.
  • Stir and let simmer until chicken is throughly and evenly coated.
  • Serve over rice.
  • Add garnish.
  • Enjoy!

BONUS SIDE: Kale chips

The salty flavor of the kale chips perfectly complements the spice of the curry chicken, and gives the added nutrition necessary for any meal!

Ingredients:

  • 1 bunch of Kale
  • 2 tablespoons of Olive Oil
  • Salt and pepper to taste.

Instructions:

  • Preheat oven to 400 degrees Fahrenheit.
  • Tear kale to chip-sized leaves and place on baking sheets.
  • Drizzle in olive oil. Sprinkle on salt and pepper to taste.
  • Mix leaves around so they are all coated in oil.
  • Place in oven. Cook for 8-10 minutes.
